Since today is officially the first day of summer, it only seemed right to get a little fancy with our Foodie Friday! After all, we’re celebrating, right?! This week’s recipe for Strawberry Champagne Popsicles comes from a pin (what else,) but was originally featured on a super-cute food/relationships/lifestyle blog, called Brown Sugar.
The best part of this recipe–aside from the champagne, obviously!–is that it’s super customizable. Not feeling strawberries? Go for raspberries or mangos in their place! Having a booze-free affair? Replace the champagne with sparkling cider. You can have whatever you like. Whether you’re looking for the perfect tipsy-but-classy post-dinner treat, a compliment to a summer get together, orrr just a sweet way to end your night solo, these pops should hit the spot! Strawberry Champagne Popsicles!
Adapted from a recipe originally posted by Cupcake–also known as Nicole–at Brown Sugar.
1/4 cups water
1/4 cups sugar
2 Tablespoons lemon juice
1lb fresh strawberries
1 cup champagne (or sparkling cider)
1. Simple Syrup: In a small sauce pot, combine water, sugar, and lemon juice and bring to a slight boil. Let boil for 5 minutes until sugar has dissolved. Set aside to cool.
2. Cut the tops off of strawberries and slice in half. Lightly puree strawberries using a food processor. 3. Pour the strawberries into a bowl and combine with simple syrup and champagne. Stir until ingredients are well incorporated.
3. Pour the mixture into popsicle molds or shot glasses and place in freezer overnight, or for at least 6 hours. Then, enjoy!
