Sometimes, a girl just needs an extra dose of chocolate. Other times, however, said girl doesn’t want the excessive calorie consumption that comes along with a molten chocolate cake, jumbo glass of mousse, or a king-sized candy bar. Luckily for all of us, a “healthy dessert” exists, and we’re featuring it here on Mieux & Mieux! Enter: Brownie Bites. While they may sound totally sinful, this week’s Foodie Friday pick isn’t guilt-inducing in the least. These are gluten-free, sugar-free, and vegan…and still manage to taste like an amazingly fudgey, chocolatey brownie. Oh oh, if that wasn’t enough, these also require only five ingredients and NO baking OR cooking. Mind blown yet?! I know. Here’s how to make them.
Brownie Bite Fudge Babies
Adapted from Sweet Lemon Magazine from a recipe by Chocolate Covered Katie.
1 c walnuts
1 and 1/3 cups dates, pitted
1 teaspoon vanilla extract
a pinch of salt (optional)
3-4 tablespoons unsweetened cocoa powder
Blend all ingredients together using a food processor.
Use a a melon baller, 1 and 1/2 teaspoon spring-loaded scoop, or your hands to create balls.
Cover and refrigerate…Or eat them ASAP!
